This exceptional miso is crafted using the traditional kome miso (米味噌) method, based on rice, soybeans, and koji.
But here, time plays an even greater role: it rests for over 36 months in oak barrels that previously held wine, where slowness becomes a richness.
In Japan, artisans reused sake barrels to mature their miso, taking advantage of the precious yeasts absorbed by the wood.
At nuu, we keep this tradition alive with European oak barrels, which impart depth, woody notes, and oxidative complexity to our miso.
The result: a dense, almost caramelized texture, a remarkable length on the palate, and a balanced umami intensity.
This Takumi miso is designed for fine dining—use it with precision, like a fine condiment.
