Traditionally, rice miso is made from polished rice because the tough outer skin prevents fermentation. Its flavor is rich and light. It is best enjoyed occasionally in soups during the colder months, in other preparations and in brines. Clearspring brown rice miso or “Genmai miso” sold by Vajra is made using traditional methods and aged entirely in cedar barrels. Unpasteurized, it has properties similar to barley miso with a slightly "sweet" flavor. Ingredients: whole soy beans * (46%), cultured brown rice * (33%), sea salt, water. * organically grown.
