For our organic mild red miso with chickpeas, we follow the traditional Japanese recipe for “Edo (家家, the former name of Tokyo) ama miso (家, mild miso)”.
This red miso, made with rice and chickpeas instead of soybeans, offers a harmonious and rich flavor profile: mild and lightly salted (6%).
Its taste is surprising: both balanced and intense.
Uses: Thanks to its low salt content, this miso is particularly versatile and adapts to all culinary techniques:
marinades, spreads, grilled fish, meats, and vegetables. A key ingredient in gourmet and creative cuisine, it adds a sophisticated touch to sauces, broths, and even desserts.
