18 months, or even 24 months of fermentation give it its best qualities. This is the traditional miso of rural Japan.
The Clearspring “Barley Miso” barley miso sold by Vajra is made according to a traditional recipe, unpasteurized and fermented in cedar barrels. This gives it a rich taste and dark color. It is a flavorful and ideal seasoning for soups, stews and sauces. Available in a 300g unpasteurized glass jar.
Producers : Onozaki Family, Yaita and Sendai Miso Shoyu Company. The Sasiki family has been making miso there for eight generations
