Kukicha tea is a mild, soothing tea made from twigs of the tea tree picked late in the season, when the plant's caffeine levels are lowest. The twigs are steamed, dried to develop their aroma, then roasted and mixed with a small portion of toasted leaves.

Preparation : add 2 tablespoons to a liter of water. Bring to a boil, then simmer for 5 minutes.
