Hojicha tea is roasted Sencha. Roasting reduces bitterness and creates a light, sweet flavor with a toasted aroma. After harvest, the leaves are stored at room temperature for one to two years, to improve flavor before being made into hojicha.

As roasting reduces the caffeine content of this tea, hojicha is often drunk in the evenings in Japan.
Preparation: Let the leaves lightly boil in water for a few minutes and pour the tea through a strainer. Can also be served cold.
