Quinoa replaces, with great interest, most cereals and rice. Excellent source of magnesium, iron and potassium. It contains more protein than the majority of cereals (which can be assimilated and without the need to combine it with legumes: it contains all the essential amino acids). The “mother grain” of the Incas. Does not contain gluten.
Along with millet and buckwheat, it is one of the cereals that make the blood more alkaline.
