Kombu is a Japanese variety of kelp. Clearspring wild kombu is harvested from the cold waters of the island of Hokkaido. It contains natural glutamic acid which brings out the taste of other foods. It contains many vitamins and minerals and is particularly rich in iodine.
Kombu is often used to season Japanese soups, noodles and broths.
It is the basic ingredient of dashi. We soak the kombu in water, or reheat it in a pot of water over medium heat, and remove it just before boiling. Then we cut it into pieces, season it and add it to the preparations. A piece of kombu cooked with legumes makes them more digestible.
