Sesame seeds are a high source of fiber, minerals and trace elements. Sesame is very rich in calcium, phosphorus, magnesium, iron, zinc, manganese and copper. Sesame is well known as a tahini sauce, but its small seeds enhance the flavor of many dishes.
Gomasio recipe: (to prepare at home in reduced quantities to avoid rancidity). : 2 cups of whole sesame and 1/10 to 1/20 of the volume of fine sea salt, lightly toasted in a pan and crushed (mill, suribashi or rolling pin).
Store away from air & humidity.
Sprinkle on cooked vegetables, salads, lightly salted soups.
