Gomasio, from the Japanese goma (sesame) and shio (salt), is a condiment to sprinkle on food. The sesame seeds and salt are lightly toasted over a wood fire then ground with a stone mill. Each particle of salt is then coated with sesame seed oil. This coating does not mask either the flavor or the nutritional qualities of the sesame, but allows better assimilation of salt by making it vegetalized.
The sesame, which is used in the composition of gomasio, is known for its richness in phosphorus and magnesium.
